Nathan's CrockPot Chili-Lime Chicken Tacos



A couple of friends and I made these chicken tacos last weekend and they were amazing! I got my friend Nathan's permission to share his family's recipe here on the blog. It's pretty easy, though (as with so many CrockPot recipes) it involves a lot of waiting! We started this around noon so that we could eat at dinner time.

Ingredients:
  • 1 1/2 pounds of boneless, skinless chicken breast
  • 3 tablespoons of lime juice
  • 1 tablespoon of chili powder
  • 1 cup of frozen corn
  • 1 cup of chunky salsa or picante sauce

Instructions:
Wash the chicken and stick it in a slow cooker/CrockPot. Combine the lime juice and chili powder in a separate bowl, then pour that mix over the chicken. (It's not going to be enough to submerge the chicken in liquid--this might seem odd for a CrockPot recipe, but it's fine!). Cover and cook the chicken on Low for 5 to 6 hours, or until tender.

When chicken's cooked through and tender, grab a couple forks and shred it thoroughly. Stir in the corn and salsa (you might want to thaw the corn a little, stick it in the microwave for a minute or two). Cover and cook on Low for another 30 minutes.

Serve on tortillas with shredded cheese and sour cream (or whatever your preferred taco toppings are). Serves 4, enough for a few tacos for each person.

Other Notes:
This recipe also scales really well. Multiply all the ingredients by 1 1/2 and you can feed 6 people, no problem. We used a little over 2 pounds of chicken and just sort of estimated the rest of the ingredients, and it worked out pretty well. It's also fairly inexpensive; it only cost us about $5 a person (for 6 people) and we had to buy every single ingredient because we don't cook very often.

Love it! We have been making this lately too, except we add a can of black beans and some chicken broth and have it as tortilla soup! It's especially good with sliced avocado on top.
