Recipe: Mini Margherita Pizzas

Over the summer, I made all of my own meals for the first time (during the school year, I have a meal plan). One of the little recipes I made up was for these little margherita pizzas. The margherita pizza is a simple but classic pizza that consists of olive oil, garlic, basil, tomatoes, mozzarella, and parmesan. This mini version is a bit simplified but still totally satisfying.

  • English muffins
  • pesto sauce
  • tomatoes (chopped)
  • mozzarella cheese (shredded)/li>
  • parmesan cheese (shredded or powdered)

  1. Lightly toast two halves of an English muffin in a toaster oven.
  2. Spread pesto on each half of muffin and top with chopped tomatoes and cheese.
  3. Toast the pizzas for a few more minutes in the toaster oven, until the cheese is melted.

And that's it! Super easy and quick. If you don't have a toaster oven, use a regular oven, or toast the plain muffins in a regular toaster and then skip step 3. Two muffin halves make a good light lunch (for me, at least), but for a larger meal, add a Caesar salad and a slice of garlic bread!
